INGREDIENTS:

  • 2 packets of KOKA Multigrain Purple Corn Chilli Lime Noodles
  • 1 salmon fillet (Or you can use other meats such as chicken breast, chicken thigh, cod fish etc to your preference)
  • 1 teaspoon of sesame oil
  • red chilli, shredded
  • carrots, shredded
  • yellow capsicum, shredded
  • spring onions, shredded
  • purple cabbage, shredded
  • Optional: 1 piece of lime

PREPARATIONS:

  1. Marinate salmon fillet with half a packet of KOKA Multigrain Purple Corn Chilli Lime Noodles seasoning mix.
  2. Preheat oven fill to 220 degrees, then grill salmon for 6-8 minutes (or just cooked through).
  3. Cook KOKA Multigrain Purple Corn Noodles in boiling water for 2-3 minutes.
  4. Drain noodles and set aside. Optional: You can sprinkle some grated parmesan cheese on top.
  5. Toss drained noodles with Chilli Lime seasoning mix and sesame oil.
  6. Add shredded red chilli, carrots, purple cabbage, spring onions.
  7. Top with grilled salmon.
  8. Optional: Squeeze a touch of lime juice. Serve and enjoy!
