INGREDIENTS:
- 4 packets of KOKA Purple Wheat Noodles
- 1 black chicken, also known as a silkie, skinned, removed head and feet, quartered
- 1½ tablespoon salt
- 1 teaspoon ground white pepper
- 1/2 tablespoon of rice wine
- 6 cups of water
CHINESE HERBAL INGREDIENTS:
- 20g of ginseng
- 15g of wolfberries, also known as goji berries
- 10g of Chinese angelicae root, also known as 当归 (dang GUI)
- 5g of rhizoma, also known as 川芎 (Chuan xiong)
- 6g of licorice root
- 10g of dried longan
PREPARATIONS:
- Boil a pot of water over medium-high heat.
- When boiling, add chicken and Chinese herbs. Bring all ingredients to a boil again. Then, reduce heat and simmer for 1 – 1.5 hours.
- Just before the soup is ready, in a separate pot, boil the 4 packets of KOKA Purple Wheat Noodles for 2 minutes. Drain the noodles and rinse under cool water. Separate into 4 bowls.
- When the soup is ready, add the rice wine right before turning the heat off. Stir briefly to combine. Divide the soup and ingredients across the 4 bowls and serve hot.
